why not get some flat tops & call it a day?

Just talk to your builder, they should know. If you want a higher compression get flat tops, lower compression dished. Your builder can work out the compression ratio, quench & all the other necessities. Like the proper cc volume of the heads( they can be anywhere form 58-62 with the 185's) HG thickness & valve relief. All of this done properly on a daily street engine can make a great difference, than just picking some pistons & slapping them in there.

If it were me I would choose like a Ross flat top something like this http://www.summitracing.com/parts/ROS-99826/ but for a basically stock type build they are a bit over kill.
